One of my favorite games to pick up and play sometimes are the ones where proper balance is thrown entirely out the window in favor of just letting you let loose and feel all-powerful

some that come to mind that I've played:
Asura's Wrath
Prototype
late-game Saints Row IV
MadWorld
the end of any Katamari game

Metal Gear Rising Revengeance
God of War 1-3 (4 is the best but it's not the same kind of all-powerful feeling)
DOOM and it's sequel
Titanfall 2
Dynasty Warriors and it's type of games (which are bad but fit the criteria

honestly DOOM/Eternal are probably the best modern examples of this. It's constantly alluded to how you are basically a god and demons fear you because you just RIP AND TEAR

DMC 3/4/5 kind of hit this especially on lower difficulties, or just when playing well in general. DMC5 in particular really hit a sweet power trip spot for me with the dynamic battle tracks tied to the style system, the better you're doing the harder the music hits and it's great at adding to the feeling of wrecking dudes that have no chance against you.

It's not all that easy but when you get momentum going you turn into a force of destruction doing DOOM finishers on classic FF monsters.

Warriors games generally hit that power trip need for me, it helps that it's pretty mindless action most of the time too. Although I would pretty much exclusively recommend the Nintendo made ones.

The only non-Nintendo musou I've played and enjoyed was One Piece.

I see you already know about saints row. I'll second Doom 2016 as well

Not quite a power fantasy, but zooming around in cyber hook feels great

On the more abstract scale of power....

Else heart.break() is a super weird title. It plays like an aimless adventure game on an island town with a day/night cycle and "the Sims" controls

Until you find an item that lets you hack properties of objects in the environment

It gets extra nuts if you can find a second hacking item, and use it to escalate permissions on the first one

The problem with going that route is it's easy to sequence break the game and get stuck

If that sounds fun and you're a PC gamer, I'd also just straight up look into "hacking" aka using cheat engine on random single player games. It is super fun to see what you can break or get away with

Maybe it's " ruining the game" to play Oregon trail, frostpunk, or banner saga and hack infinite resources to save my townsfolk, but I love it. Or to hack myself a full stack of coffee in Stardew valley. Or infinite money, food, or fuel in a roguelike, but it feels good to bypass requirements

oh yeah probably more shmups than not are fully valid answers here too now that i think about it. if you're not wreaking havoc on some faction, some army, some race, some invasion, some city, some thing you're probably not playing a shmup

I mean there is a reason games like Starcraft and Age of Empires had built in cheat codes. And why the game shark was popular.

I remember going through Goldeneye while invincible, chopping everyone to death or filling an area with explosions from duel wielded tank cannons without the tank. It was a blast.

A weird one that came to mind that doesn't exactly fit but does something similar

3D Sonic games, WHEN THEY WORK (so like Generations, some of Color) is basically the closest I've been to just straight up feeling like The Flash moving so fast the world can barely keep up

I used to put All Guns, Infinite Ammo, and Invicibility on Goldeneye, and then trip the alarm in Bunker 2. And then do whatever I wanted with the unlimited guards that couldn't do anything to me. Then when I'd get bored, I'd let Natalya access the computer which makes the Goldeneye fire on the stage, and watch all the guards die as I become a walking explosion.
