I'm reading a series called Cowboy Necromancer which has a ton of focus on Chili recipies/food etc, and while I have had them in mexican dishes over the years, it's never been a focus of any of the foods I normally eat.

So I did a bit of research and the web even says eating them may make you live longer, and that they are very healthy with more Vitamin C than oranges and other good vitamins as well.

So I'm gonna get some next time I go shopping, and start cooking with them more often.

Any of you cook with them? Have any favorite dishes etc? Thinking of stir frys, maybe I'll try cutting some up in my pasta sauce next time (always used bell peppers before) and things like that. Even the dishes I did use them in, in the past, I never actually ate the peppers.

Gonna be a new experience!!

I've used serrano peppers before when making sauce/soups etc, it's a bit more of a kick then bell peppers AND much cheaper in the store. That is generally as far as I have gone with peppers though. Gonna switch that up soon.

Pico de gallo is super easy to make, it's incredibly healthy, low in calories and fat, and very tasty. Just chop tomatoes, onion, jalapeos and/or serranos (or other kinds of peppers to make it hotter or milder), and cilantro and add the juice from 1 lime, maybe a bit of salt and black pepper. Some people add a bit of fresh garlic.

I use some of the ground-up flakes when making kung pao, at home, and a fair amount more when making mongolian at work.
