Bitcoin is volatile; and while that volatility often trends upward there's no telling when flash crash will happen. Couple that with long transaction times while the whole ledger gets validated to confirm the transaction and the amount of wealth transferred at the start of the transaction might be drastically different by the end of it. For that reason most people can only cash out their crypto on very large purchases or by selling to very wealthy individuals.
