Preferably something a little newer than like, Fallout 1/2.

I like some of the concepts in CRPGs like the choices and stuff but I'd like to have a solo experience rather than manage six people

I know that the party system probably comes from converting tabletop games into videogames, but in a tabletop scenario there's 5 other actual people to pick up your slack

Not going with your request. But Pathfinder 1 and 2 are amazing and can get you 200+ hours of stuff each game.
