I don't think the characters in the Simpsons are actually yellow, that's just our perspective.

It's like in anime when a character yells at someone their head grows massive to emphasize their anger. It doesn't mean literally their heads grew 25 feet tall for 14 seconds. It's representative.

They're openly refered too as being white and black characters look black.

Don't forget, the Critic shares a universe with The Simpsons and Jay Sherman turned yellow when he appeared in it but isn't in The Critic.

Tons of real life figures like George Bush Sr and R.E.M turn up as yellow-

Although oddly enough the Griffins weren't yellow when they visited Springfield, and I think Peter mentioned that everyone looked like they had jaundice, so they were yellow in his eyes. But technically that crossover was a Family Guy episode...

If it helps, fans of the show like to cope by pretending the "Actually it was a dream, this is the real world." part was the dream.

Theres a bunch of futurama style stuff in old simpsons. In the Bart gets famous episode, we see the head of Kitty Carlisle which is the first ever head in a jar gag.

That makes sense because a lot of episodes contradict each other. Like Bart passes 4th grade with Ms. Krabappel as his teacher, yet is still in 4th grade after she dies.
