I wish I could lock you in my house for a week. 75% of stuff I make uses a lot of onions. My eyes built up a resistance to onions thanks to accidentally rubbing them in my eyes too many times.

I recently got into the habit of roasting things, red peppers are another thing. I want to try something like a jalapeno and see how that works.

Also tried soft boiled eggs for the first time, after always having hard boiled and thinking that soft boiled were a lot more difficult to cook and deshell. Spoiler alert, they aren't. And its my new favorite way of making breakfast sandwiches, or adding it to a salad.

I can't give you the exact time, but I tend to like mine boiled in salted water for about 5-5 1/2 minutes. Be careful when deshelling them, as the whites give way pretty quickly. One thing I've learned is that there is one side on the top or bottom that has a little divot. Once you find that side, crack away the shell there and blow real hard. You should hear the shell separating from the egg, makes it easier to peel.
