I didn't spend much time in these settings, but I know you can do both arms, or both legs. I do not think you can do all 4.

Horizon is all open world stuff. I think they might have a race track in the open world, but it's not a real life track if there was. (I have not been able to put that much time into the game yet as I work today and it came out at midnight. I pretty much only did the intro)
