Unfortunately, would have to largely agree with the liberal arts degree naysayers unless you plan to immediately flip it into a graduate degree like law etc, or are on-purposely going into general teaching/academia in some form.

Environmental Studies and Environmental Science. Environmental Science gives you the quantative skills needed to conduct research and find ways to address envitonmental issues.
