Just that blend of the mundane day to day, the relationships between the characters and their development, and then the main plot

Yakuza is similar ish but not really. Doesnt scratch the same itch persona does

Fire Emblem Three Houses would probably work, but it is a fantasy setting.

You spend a lot of the day socializing/training then break it up with battles and story.

FF Type-0 is action. Thousand Arms is a regular turn based rpg.

Tales of... games sort of fit, the party converses via skits but there's little actual player choice. Xillia 2 may fit the bill.

Grandia games have party interaction via meals/dinners and conversations. The main cast also pretty regularly banters with the NPCs you come across and can talk to as opposed to it being one-sided. The combat system in these games still stands as one of the better ones in an RPG too, IMO.

Two standout options, but nothing that really takes the more mundane aspects of socializing as heavily as Persona.

Edit: If you don't mind goofy action games, the Way of the Samurai games are open-ended stories that are largely decided by who, and how you talk to people(and when in some cases) across the span of some amount of days. Kinda... closer to a roguelite though than an RPG.

completely forgot about this one. This is what Im after, but I feel like the socialisation parts of three houses arent as fleshed out as the day-to-day in persona

Yeah, that's relatively unique to Persona honestly. Persona is basically equal parts Visual Novel and game.

I hear the Trails in the Sky/Trails of Cold Steel games do something similar but I haven't ever gotten around to playing them so I couldn't honestly say.

Im playing through the trails series now, and thats not how Id describe it. Its just a standard JRPG but with a very long and excellent story, world building and character development, which I would compare to the MCU in terms of what they are trying to accomplish.
although Im not at Cold Steel yet so maybe it changes somewhat
