The funny thing about cheese is that you dont have to go far to find it. Did you know that up in Vermont theyve got plenty of it in their milk and dairy products and most of it is good stuff. Hell, go to your local farmers' market and youll find an array of cheddar, stinky cheese, blue cheese, aged cheeses, goat cheese and of course a lot of wonderful varieties. All of the cheeses they grow up there in Vermont, but most are white cheeses like cheddar, stinky cheese like washed rind and blue cheese like Gorgonzola. The only exception is Brie. Let me tell you a little something about that: It was originally a French cheese and its most often made with raw milk and washed in a brine of some kind to give it its unique flavor. Brie is not a common cheese in Vermont and many of us will have never had it. That is, until the local cheese makers at St. Peters Creamery started selling it here.

Nah i do love american cheese i eat it by itself as a snack often. But whatever babybel is mozzeral I believe. Is best for by itself. I eat cheddar by itself sometimes too. Mother used to get onto me cause of by a 1 pound block and have it before we even got home. Out of what id put on a sandwich muenster or however its spelled. Velveeta for pasta. For using in something (as an ingredient or a topping, or a filling etc.) then cheddar probably wins as it's inoffensive and versatile enough to work with anything (the more mature the better IMO)
But when there's a cheeseboard or platter on offer my favourite is usually the blue cheese (a good stilton or binham blue is always gonna go down well with me). --- ... Copied to Clipboard!

Cheddar, mozzarella, and parmesan are all you really need in general. Sure other cheeses might be better for certain dishes, or even just eating on its own, but you can do just about anything with those 3 and it will be fine.
