Super-suppressed Jiren elicited a shocked "Is this really the energy from just one warrior?!" comment from Beerus just by flexing in preparation for his battle against Goku. Whis stated in the past that Beerus has not mastered Ultra Instinct. Goku attained MUI and then Jiren powered up to match him. All the Gods of Destruction stood in amazement, because these mortals surpassed them. But nooo... Beerus is still "untouchable" for plot reasons. It would be more interesting for them to roll with the obvious--Beerus has been surpassed by Goku-- to explore further the relationship between the two and see Beerus actually have to try to reclaim his superior status. It's not like a mortal being stronger than their god is disallowed. It was made abundantly clear by Jiren's own God of Destruction that Jiren was above him. I'll never get over that throwaway line where (I think) Whis says there's only like 50 planets with people on them in their universe. Not to mention the retconning of the potaras being temporary, the fact there were 5 supreme kais (and should have the same amount for each universe, not just one,) and the concept of god ki is dumb.
