You're probably going to get a lot of recommendations for mixed drinks where you "can't even taste the alcohol!". Anyone who says this to you is wrong. You will taste the alcohol--at first. It takes time and exposure to stop tasting the alcohol, but a lot of people forget that phase (or didn't have whatever mixed drink they're recommending until later).

I'm not saying you should try whiskey, but if you try whiskey then get one that's at least mid-grade like a 10-12 yr scotch or something else in a similar price range. Get it neat with ice on the side so you can try it straight, with a few drops of water added, and with ice added.

i like drinks that dont taste alcoholic but I do agree that there is a specific craft to developing a cocktail around the taste of the liquor to enhance it and make it enjoyable in its own right. I have gotten to that point with tequila where I love the taste pairings I can come up with, vs a mix it in and try to hide it (though many of my drinks are just that).
TC, 21 is a coming of age. Youre right, drinking socially is an acceptable venue to build friendships, meet people, rub elbows, etc and having any experience at all is beneficial IMO. Experience your bday how you want to experience it. Dont let others tell you not to or how much, just be safe. Drink a glass of water for every alcoholic beverage you drink, or at least make sure you know where some bread is at all times.
I had drank very shitty liquor a few times before I hit legal age. So I went into a bar on my birthday and went through every crafted cocktail I had ever heard of, from movies or pop culture or whathaveyou to see if liquor can actually taste good. The answer is unequivocally yes. I did not have a good day the next day, but I had a lot of fun and some idea of cocktails I liked.
If youre playing with the idea of a Moscow mule, somethings you should know- this is a great drink if you like ginger, if you know you like ginger beer, youre in the clear. I would make it with nonalcoholic ginger beer even though they do sell alcoholic ones. Also for whatever reason they taste the best cold in the little tin cups it shows when you google them. If a restaurant sells them in a normal glass, get something else. For that reason, and Im not trying to be a snob, but maybe see if you can find one of those cups if youre going to make it at home (which is very simple to make btw) or just get one with your bday dinner.
Someone said a gin and tonic, that could be good. A simple pairing at home akin to what youve said you like so far is vodka or white rum with lemonade. If you like more fruity or tropical drinks theres a million you might like, just as a general rule stick to the same color liquor all night (aka if youre drinking vodka dont switch to whiskey). What gets you in mixed drinks is usually the sugar content, which again means drink water water water.
