Depends on which version you're playing, you can use the superior non-tank controls.

I found the first few runs can be a bit difficult because it can be stingy with ammo early on (Something other Resident Evil games don't do), and about halfway through the difficulty spikes quite a bit when you return to the mansion the second time. Unless you are following a guide, no shame in restarting if you are feeling stuck and using your lessons learned to try again. I feel like the game expects you to retry it multiple times and the remake didn't change that one bit.

This but that's what I liked about it, although unlike alot of other games especially nowadays you arn't restarting a 50+ hour game, if you remember what to do you can easily get back to where you were in one or two decent length play sessions.

Also if you're using modern controls you can juke the zombies fairly easily.
Some other tips:

Aim up when you're using the shotgun because it's the only way to get a headshot with that gun. After awhile you should just stockpile it's ammo so you can switch to using it primarily in the second half of the game.
Always burn zombies with the Lighter+ Kerosene in high traffic areas

You can dodge zombies pretty consistently by either luring them to one side of the room and running around them if the room is big enough or going in and out of grab range to bait out a grab and run around the zombie while it recovers, so I don't bother killing most zombies. Hunters outside of the ones on the stairs near the save to are pretty easy to avoid because they mostly scream and you run past then.

The game is pretty generous with health and anti grab items as well, making a mostly pacifist strat viable. About the only enemies I kill outside of mandatory bosses are the zombies and chineras in the lab to make fuel canister transport easier, the hunters on the stairs near the save room and the mirror hallway zombies on my second mansion run. Most bosses go down in 8 super shotgun blasts, so aren't too bad. Overall lack of ammo really is not too much of an issue unless you kill everything

You're really not even supposed to kill every zombie anyway. There's a few you might consider killing because it will just make life easier, but be sure you burn them if you do.
