I barely remember the controls let alone what I'm supposed to be doing or why my skills are set up how they are...

Any tips for a returning player?

I mean remembering how to play / playing well is as simple as finding the right guide.

The daunting part to me is remembering all the aspects to their hundreds of convoluted plotlines.

Just go through and reset your hotbars for whatever job you're comfortable with. Most MSQ quests aren't very eventful, and you could just find some cliffnotes of the plot.
