In my stealth game if you left doors open or busted then with a crow bar or picked the lock guards would notice. Whats with this door?

Yeah. I'm not sure when that started being a thing, or the first game where I encountered it, but I do it out of complete habit now even if the game in question doesn't have that level of AI involved.

If nothing else, closing doors breaks lines of sight. If you're in a room with an open door, a guard patrolling outside can see into the room and potentially spot you. Closing the door not only prevents them noticing that it's been opened (if their AI notices that sort of thing), but means that they can't see you.

Depends on how hardcore it is. Thief games it most always is Yes, and for stealth horror games too. For like MGS or Hitman I tend to just do whatever.

First time I remember it being important was Splinter Cell 3. They made a point of it in one of the tutorials. MGS2 (and to a lesser extent MGS) had observant guards (footprints, for example), but the doors were automatic so they wouldn't have noticed.

I wouldn't consider Asasssin's Creed games as stealth games imo
The only stealth games I play are Hitman and they barely count either
But the answer for that is...sometimes? the doors close automatically after a few seconds but if I need to do something bad I close them manually, yes
