i actually thought the second credits scene would have been him, but no, it wasn't

Again, no. He just didn't appear again. You could say they "forgot he existed" if this wasn't already the final episode (and White Vision leaving was the resolution to the Vision "battle")

There was already two separate post-credits scenes, there's no reason we can't have one or two little mysteries left.

You'd think someone would at least be like, 'Hey btw what happened to the most powerful weapon ever created that we spent the entire season building up as a problem because there's only a single one of him?'

In the immediate context of the show, sure. But they've certainly established a long pattern of being concerned about these superpowered people throughout the universe. Even Wanda should be like, 'Hey what happened to my resurrected dead bf? lol oh well i'ma go live in the middle of nowhere'

I think I saw chart somewhere that showed if you include theatrical films and the "Making Of" behind the scenes docs they'll be releasing, we actually will have new Marvel content every single week until the end of the year.

I'm not so sure. Falcon/Winter Soldier was originally supposed to air prior to WandaVision

I very much doubt there will be any notable cross over between the first "wave" of shows, or even any major tie ins to films. This was meant to be Marvel's proof of concept for their TV shows, they need to be able to stand primarily on their own or people won't be invested enough for cross over material.
