I am talking about the presentation / preparation of the dish and not the ingredients. Dumping sauce on top of plain spaghetti is pretty much an automatic F- from me. If I was a michelin rater I'd walk out. If I was a chef on TV you'd be getting screamed at.

Spaghetti actually goes much better with oil and garlic (spaghettic ali olio, the most popular spaghetti dish in Italy) than anything else.

Tomato sauces go better with tube noodles like ziti or rigatoni which are much better at holding a tomato sauce.

Heavy cream and cheese based white sauces go best with flat long noodles, like fettuccini alfredo.

Spaghetti with marinara, meat sauce or meatballs is a very Americanized thing I believe.

That's cool, I'm just saying imo white sauce is disgusting and vastly inferior to red. A good marinara is damn near a meal in itself without noodles.
Makes me think of those dudes still clinging on to VHS/cassettes as the "superior" format, they had their day but there are better options now

When I was in Italy (Rome, Florence), I never saw a tomato. I was kind of surprised. My girlfriend at the time told me do black people in America (I am a black American) eat the same as black people in Latin America, Europe or Africa ?

Also spaghetti al carbonara - Rome's signature dish didn't come about until Americans brought eggs and bacon after WW2. Romans substituted bacon with the superior pancetta.

Meat sauce itself "ragu" is italian but there's definitely an american version of it that isn't anything at all like real ragu and not to be confused with the ragu brand of jarred sauce.

Spaghetti with meatballs is definitely american and although you can find it in italy nobody really eats it that way. Italian "spaghetti and meatballs" is more like a bowl of spaghetti and a separate bowl of just huge ass meatballs that you eat by themselves or with scarpetta.

And idk what the fuck this is but I hate it.


nothing more genius than having dry ass noodles with a plopping of sauce on top of a small plate
