I got the Basement Key for the Undead Burg from beating the Moonlight Butterfly, and that looks to be the only way to get in.

It's definitely not. Moonlight Butterfly is entirely optional.

Without looking it up, I think you're confusing the Basement Key with the Watchtower Basement Key (or something like that). You get the latter from the area beyond the Moonlight Butterfly, but it's the former you need to get to Capra.

I think Capra demon was the first boss I fought after the tutorial island, Im not sure how you made it to the butterfly first

or how you survived in that area

I don't know how tf anyone survived the Capra Demon, it killed me in like 2 hits and it has minions too

Looks like it increases poise by a significant amount. Poise is essentially stagger resistance if you didn't know. So with very high poise you can face tank attacks without flinching.

Your resistance to being staggered when an attack hits you. Basically your ability to hyper armour through blows.

Increases poise. Poise lets you tank attacks without flinching/getting staggered, provided you have enough of it

Okay, I'm not sure where either the Key to Depths or the Watchtower Basement Key go.

The watchtower basement key unlocks the door at the bottom of that tower right before you fight Taurus. The key to the depths unlocks a door that's down a tunnel if you hang a right from Capra's little courtyard

There's stairs right outside the capra demon fog door. I personally first missed them too.

It looks like the spear scales more with dex. If you are sticking to that weapon, I'd start putting your points into dex instead of str.

You can buy them later. Leeches also drop them.

Various places going forward. I think they're a rare drop from the, um, "green" enemies in the depths. I think there's also a couple of them to be looted there. They're very easily farmable in the next area you get to.
