What are some good alternatives to grilling a steak meant for grilling? I don't have a grill, and my friend doesn't want to use his bbq.

I would heat a cast iron skillet up to desired temp first,then yeah you can cook it in the oven.Be sure to pat olive oil on it along with salt.

You can cook it in the pan.

You can also reverse sear by cooking it in the oven at 225F until the steak reaches about 115F and then finish it off in the pan by searing both sides on high heat for about 45 seconds each side.

ya reverse sear is the way to go...

I like it much better for thick cuts than 100% grilling for sure.

So, as it turns out, I'm gonna need a lot more information about this. I don't cook much so these questions might be pretty dumb.

I'm gonna cook the steaks on a cookie sheet. Do I need to grease it first?

Can I sear them on any ol pan, like an aluminum one? I don't have a cast iron skillet. And again, should I grease the pan when I sear them?

Aluminum (and copper) heats instantly and cools instantly. Iron heats slow, but holds onto that heat essentially forever.

In the context of steaks, nothing really changes apart from when you turn on and off the fire.

You can but it's not gonna taste great without a sear. You can cook it in an oven till it temps where you want it then sear it in a hot skillet or vice versa

If that's the plan, a microwave works just as well. Maybe a sous vide if you want to be snooty about it.

Lol, no. Microwaving a steak is gonna fuck up the moisture content and cook it from the inside out. it's gonna be tough and probably overcooked. Sous vide works good though.

I personally just sear and finish in the oven. Just easier and requires less cleanup. Might get a little fancier with some butter basting if it's a really nice steak

Cook in the oven. There's two ways to do this.

Very high temp: 450 degrees, you'll have to turn the steak over part way through. No need to sear.

Normal temp: 350 or so. Takes slightly longer. Pan sear the steak on the stove top.

"Sous Vide" method: watch a yt tutorial on this it's too complicated to explain over a phone keyboard.

There are attachments you can affix to the side of a large pot for this, TC.

Get those and a vacuum sealer for plastic bags, you're set.

Juiciest fucking chicken breasts I've ever had, you can marinate them in the same bag.

Chef John sous videing a strip steak with no special equipment, other than a thermometer. You probably don't need to sear it initially like he does. He likes to experiment.
