I don't like the spicyness of Mexican food. I've grown up on a more... bland palette.

Like why eat spicy ground beef in a wrap when you can just eat a salt and pepper seasoned burger with brown gravy and have a much less annoying "oh I need to drink water now" experience?

I came here to basically say the same. Doner kebabs (in bread) and durums (in a wrap) are Turkish and a very nice replacement for Mexican food, even though Mexican food is still my favorite.

Coming from an American living in Germany.

Well like you said those are very bland flavors. Mexican flavors really pop out at you, they're not inherently spicy

im not a fan of wahaca. imo its hard to find a good mexican restaurant over here. theres a couple in london but theyre expensive. outside of cities i cant imagine they would exist

but old el paso fajita/enchilada kits are super popular here, thats what people would have as mexican food

Is it related to the Japanese-food chain Wagamamas?

They're so bland. I used to buy them but now I do my own thing. No idea if it really resembles Mexican food but it works as a burrito. Slow cook the meat in a good deal of suitable spices, usually pork or beef. Plenty of beans and rice. Smoked cheese. Make my own guacamole and salsa. I'm not really a fan of sour cream. Don't go too heavy on chillis because I'm cooking for me and two kids but always keep in some habanero sauce. Flour tortillas, I like corn but they're only available in tiny sizes here.

Also make enchiladas, found the kits to be useless.

i'm not a fan of the kits at all

i tried cooking somewhat authentic tacos with corn tortillas and homemade pico de gallo you're right. you need the right spices and to slow cook meat. i'm not good at that
