However the beginning is a bit abridged so it's ideal to watch the original series until it begins to diverge from the original story and then switch to brotherhood.

Brotherhood, but the abridged early sections are a weakness to be sure. Once it speeds past what little canon the original anime did adapt, the quality spikes into the stratosphere.

Brotherhood is better, however I don't think I would have enjoyed it as much if I hadn't seen the original first.

If you are only watching one, pick Brotherhood, but if possible, you should watch both.

Yeah watch like 25~ episodes of the original if you want to see the early stuff covered at a reasonable pace.

Brotherhood will reach the same point in only 10 episodes which will feel a bit rushed, especially if you haven't seen the expanded version.

It won't ruin Brotherhood for you if you skip the original entirely but you'll want to keep in mind that the pacing would improve considerably once it catches up to the divergence.

The original completely breaks off from the manga partway in and then just tells its own story.

The manga was still ongoing when the original FMA anime was made, so they had to make up their own (worse) story once they caught up

Yeah, the original only covers the beginning of the FMA story, because that's all that was finished in the manga at the time.

Brotherhood covers everything from the manga, but it rushes the beginning, most likely because that part already existed in anime form.

I've never understood why they can't just let anime take a break to wait for the manga to continue and then come back once there's enough to adapt. Instead of making filler which is practically always awful. Or do Japanese fans enjoy filler? I could see that

This is how they (generally) handle it these days since Japan realized that "seasons" are a feasible concept, but back in the day the idea was that if you ever took a break you'd lose your timeslot and be doomed to obscurity forever. Kind of hilarious thinking on it since way more anime is pumped out today than when people actually saw this as a problem.

Watch the original in its entirety, then Brotherhood. This is what I did when I rewatched the original so I could compare it to my first watchthrough of Brotherhood. Even though the original tells a different story, I think it's good for what it's worth and the tone is kind of different. Certain characters are also different, and one even lasts a lot longer in the original. My biggest complaint with Brotherhood is how it rushed through what was already shown previously, so it's difficult to recommend it to someone who hasn't seen or read any FMA as what they should watch first. Brotherhood also skipped a particular fight that I had contention with

As for filler, I heard anime nowadays actually do take a break instead of doing filler?

If you're reasonably confident you'll enjoy it I'd watch all of the first, then all of Brotherhood

If you're on the fence, maybe watch a little bit of the original and if it doesn't hook you jump over to Brotherhood

I do know it's actually because money
Gintama actually did that several times! I think it would generally be pretty hard to maintain your audience, though, especially with a less episodic show.
