Like we had a meeting and I was like nah I don't think that I could do that in principle much less in practice. I'd definitely need a lot more capacity than I have

Next week I learn that he signed a contract for me to do it by the end of the month. When I brought up that I couldn't do it he was basically like 'im pretty sure you can do it if you just (stuff we talked about and didn't convince me before)'

I'm not sure what to do

I mean if he can prove he said it before the contract was signed, the boss can't say anything. You can literally go full malicious compliance on this as well.
