You miss out on the console marketshare and potentially strangle the PC marketshare, although the modular nature of the options menu trims that out a little bit. It also takes more resources to get those amped resolutions, particle effects, etc. Which means you miss out on even more profit because of the costs. Short version being, there's little profit to be made in making a tech demo. You'll notice that they're all functionally open world games.
