I'll be using leftover ham that my dad cooked today. This is my first time making fried rice.

What #2 said, use one day old white rice. You aren't cooking it, you are literally frying it, high heat, constantly moving it so it doesn't stick and burn. It's almost like when you brown pot stickers or something similar.

Finish it with about a teaspoon of sesame oil, don't cook with that oil, just use it last second, stir it in for 10 seconds and serve. It gives it a real nice boost of flavor.

Bragg liquid aminos is a very viable replacement for soy sauce in your rice also, and it's a bit healthier and lower in sodium.

Fried rice is tough to nail, it took me a good 4 tries before it turned out close to restaurant quality.

Sesame oil isn't a necessity but I really enjoy it and generally when I cook for people it goes over well. It's typically around $3 or so at most grocery stores in the international food section with the other asian sauces and whatnot.

I could see that, but I like the idea of the binding a bit.
You would just have to keep moving it around real quick at high heat....I'd think.
Of course, cooking is trial and error, until you get it..so there is that!

Also just for kicks lets, @FF_Redux see if he has any input.

Haha ya... I will admit, I am not the go-to for Asian style cooking.
But I have really wanted to do a stirfry that included Sweetpeas, and stuff.
It is also almost fiddlehead season, which can be interesting. ((And no not the beer)) :-p

Fun fact: There is a wine brewery by me, The owners are Named Richard and Terra, they are married.
I met them once at a bar/pub/restaurant one town over (( @LeperMessiahXX The Factory )) They didn't really realize their names came to Rich - Earth.

It was a cool night, and I was going through some shit at the time. I got home in one piece but it ended with me passing out and really burning some chicken in the oven, the place smelled of it for days.

Still, I didn't burn the place down, so it's actually a good memory.
If I were smart I would hit the place up for a job someday.

Quartz is my favorite mineral and all high and low form.
So many colors, so available to everyone.

It is ironic that Rose Quartz is not particularly rare....but a Quartz Crystal is very rare.

Fun fact, if you hit or grind two pieces of quartz it will create a bit of light.
It is not a spark, it is the molecular lattice rebounding from the pressure applied.

Try it under water...It's not a spark.

Thank you everyone!

I made it today (well, my mom helped me, too.) Here's how we did it.

-We sauteed the ham, onions and garlic. (Didn't bother with other vegetables.)
-We added cooked rice and soy sauce.
-We then added the salted beat egg. (I think in retrospect we should have fried it separately.)
-In lieu of sesame oil, we added regular oil. (But next time I'll use sesame oil.)

It turned out pretty good (though of course it could be better.) I'll probably post a picture later.
