Ive had them for a while but never got around to them because I hate the idea that in order to apparently get the best ending you need to beat the game without killing anyone

Is this relatively doable or is it like MGS games where you have to save scum a lot

Also in Dishonored 2 does it matter if you pick Emily or Corvo? I was gonna go for Emily at least the first time around

like, if you kill and leave bodies behind, rats will feed on them and spread the plague, which will lead to a "high chaos" ending, iirc.

but if you don't want to kill, it's definitely doable. you are also given alternate objectives if you don't want to kill the targets that you're assigned.

You can kill quite a few people and still get the good ending. Just avoid going on killing sprees if you can. You get a rating at the end of each mission that tells you how you're going. I generally spare the city guards and when things escalate with gangsters or assassins I kill those guys.

Don't worry about the ending and just have fun with your tools. The story is just ok and the gameplay is the star of the show

Yeah, you can get the good ending while still killing people. From the wiki:

It has been reported that, for high chaos to be achieved, [player] must kill 20% of the human population per mission. If total kills exceed 50% of the population seen, the city is irrevocably thrown into chaos, and the very high chaos ending is depicted. However, these thresholds are not absolute, as there are several other factors that increase or decrease chaos.

The other factors being sidequests and such. It's pretty obvious what raises and lowers chaos in those situations. You complete the sidequest where you poison a bunch of people, chaos increases. You save a woman from being eaten alive by rats, chaos decreases.

I enjpyed the first one, but I got 2 on sale a while ago, tried playing it, and got too frustrated and annoyed with all those upgrade hearts or whatever that you have to find to improve your skills and they're really well-hidden (in an annoying way).

Also one of the early levels tripped me up bad and I couldn't figure out where to go even to progress the story (or rather how to get there past an impenetrable wall of soldiers).

I did a nearly perfect pacifist run on my first playthrough. It's pretty easy, since you can quick save. The main drawback is you can't take advantage of many of your abilities if you're being a pacifist. BUT no matter what kind of run you choose, I suggest finding the non-violent methods for disposing your main targets of each mission. They're all so much more satisfying than death.
