I haven't heard anybody address this, but I assumed that once you'd had it, you couldn't catch it again. Is this the case?

But yeah, things are looking grim.

A few people in China and Japan have been found to have it twice. Though some think it could be faulty testing the first time and or they never got better.

Actually, no, I don't think it's likely. If your immune system has fought and won against the virus, it has a memory on how to fight it again.

imagine recovering from the Coronavirus, but because so many people around are also carriers/you might come across some contaminated environment, and you get sick from it again because it mutated, or some such.

That isn't how it always works. There is a reason why there is a new flu vaccine every year. The Coronavirus already has mutated and will continue to do so.
