Tomb Raider on the PS1. First 3d game I played and it was a huge leap up from the SNES/Sega Genesis. I remember thinking it was almost lifelike and that video game graphics wouldn't get much better than that.

I don't think any game will ever impact me the way Dragon's Lair (arcade) did. Seeing something like that alongside Pac-Man and Burger Time was absolutely mind blowing.

Sonic 1 on the Mega Drive. I couldn't believe how complex the graphics were. I'd probably never played a game with more than 3 layers of parallax scrolling, and this had about eight. There was also the excellent attention to detail, such as how the ground looked in Green Hill Zone.

Later on, there were a few other games that shocked me with how good the graphics were - Soul Calibur 1, Crazy Taxi 1, Call of Duty 2, Gears of War 1, Mario Kart 8.

My first one was probably MVP Baseball 2003 on PS2. I had played a ton of Triple Play 1999 on PS1 when I was a kid, and I couldn't believe how fluid MVP 2003 was. The bat was actually visibly contacting the ball, players were running realistically. I couldn't get enough of it. I wouldn't even want to know how much MVP 2003-2005 I played. Glad they didn't track hours.

Probably Super Mario 64.

I grew up with PC, an NES, Sega Genesis, Game Gear, Game Boy... so things like SNES and the early Playstation games felt like fairly natural progressions of those games.

Super Mario 64 really upped the visual level though.

I think Goldeneye also really impressed me but maybe it was the hype.

hard to say. Probably Mario 64. I was giong to say FFVII, but by the time the game came out, great graphics (for its time) already existed, and I know Mario 64 was amazing as well.

I'm not sure if I was blown away by another game prior to Mario 64. I am certain I was, but can't remember the game.

The first game that completely blew my mind and i thought "how is this possible?" was likely Metal Gear Solid 2. I was thoroughly impressed by video game graphics at this point, but MGS2 put it into another level.

Edit: That said, I haven't been blown away by graphics much lately. There are times when some people mod a game like Skyrim and it looks so real I wasn't sure I wasn't looking at real life. Unfortunately, I never played those mods to see it for myself. There was this one time I was looking at a thumbnail of MGSV Phantom Pain on Youtube, with Quiet standing next to Snake. I thought it was a CosPlay for a moment, but after looking at it again, I realized it was the real deal.
