This would probably be the best way to appease old fans while also renew interest in Star Wars.
The old films are great, but everyone loved the Vader scene in Rogue One. Imagine a whole new movie like it. This happens to games all the time. An IP becomes stale and fans are mixed on new entries, so they remake the ones everyone loved. See Resident Evil 2, FF7, etc. ... Copied to Clipboard!

I'd be astounded if they don't remake them all at some point during my lifetime. But maybe not for another forty years or whatever.

No. People already bitched when Lucas went back and made changes to the original trilogy, an actual remake of them would be insane. Disney's done best when they made spin-offs of Star Wars anyway.
