Why is the ground/terrain texture and model isnt visible from the other side and it's just see trough?

Because that would require processing power that could be used to render stuff that you are supposed to see instead.

A vast majority of polygons will be single side render to conserve resources since most objects will be closed up. Same reason how sometimes you can get the camera inside a characters head and just see a pair of floating eyeballs and teeth.
