Some vehicles don't have many options... you'd be lucky to find compatible wipers.

Some can be turned into airplanes (hyperbole)

It's a luxury sedan, so lots of options at purchase, not much aftermarket other than headlights or rims.

Anything you might want that you can't find in aftermarket can be manufactured... so pretty much any car is fully customizable depending on how much you want to spend.

Some upgrades aren't worth the cost though. in some cases its cheaper just to buy the car/truck with the upgrade you want.

Understood, but TC asked how customizable, with no stipulation to cost. Even going so far as to point out (through hyperbole) that some vehicles can be turned "into airplanes", inferring that cost is indeed not much of a factor in the question.

In that regard, pretty much any vehicle is fully customizable.

I assume Op was getting at what is the aftermarket modification scene like for your vehicle.

So my current car is the MY20 Mercedes GLE SUV. Like most luxury cars it has some good option lists at purchase which I indulged in but post sales modifications are limited to very generic (sunshade? Stickers?) options. Nothing specific yet for my car.

After I owned an Evo X in 2008 which had a lot of mods available so I was constantly looking for inspiration and modding what I could afford back then (especially as I had to import everything from the US or Japan myself). But it had reliability issues and I got fed up having to take days off work to go to workshops so thats when I started buying German.

The fifth generation Camaros have been really popular. There seems to be a lot of aftermarket customizations available for my car.

Chevy S-10 pickup. I would love to give it a flame paint job and fix all the small problems it has. Im starting to think having the check engine light on is normal. (Just a small problem there, nothing fatal. A bit pricey part though.)

My car has the same engine as the Camaro SS and the Corvette C4, so you can use pretty much all the same parts. I replaced my starter with the Corvette version, which is smaller, lighter, and more powerful. I also installed a Camaro air intake, which eliminates the big resonator boxes that do nothing but rob horsepower.

My 2003 Evolution VIII is extremely customizable and mine is fully built. My 2007 Civic Si is stock but also very customizable. Heck even my 2000 CR-V is pretty customizable if wanted to do so. Lift kit and some bigger wheels be nice.
