Sometimes cheese is better when it's soft and gooey or whatever...

But I'm talking about cooooooked cheese to a perfect golden brown!

Obviously pizza, of course, ain't no one likes raw cheese on pizza.

But then there's lasagna... now, I love well cooked cheese on lasagna, but some people prefer a dry ricotta instead.

Cheddar, probably. I've never *seriously* browned it though, like to the point of near-char; just a nice golden brown.

I wonder if you can get a good straight sausage and stuff it in a manicotti and buffered with ricotta and covered in mozza

I once did alton brown's grilled grilled cheese and that was epic. It also browned the cheese pretty well.
