I've tried making it a few times and it turns out decent but it doesn't quite hit that Chinese takeout perfection. It doesn't taste quite... fried enough, just flavored rice. How do I improve? More oil? Less? Heat, time?

You need to cook with a wok on a big ol fire and use peanut oil. Since you dont have an extreme stove lile the restaurants try pre heating your wok in the oven to get it fucking hot. Stir fry is fast and hot as fuck. Never stop stirring

I always use refrigerated rice. I'll try cranking up the heat. I guess that does make the most sense.

The secrets are not to overcook it or undercook it. It also needs to be seasoned well because rice is very bland by itself where there is "Not an ounce of seasoning!'-Gordon Ramsey

This is the biggest component. If youre gonna use new rice, put in the fridge first. And MSG is a good ingredient to use alongside peanut oil
