Yeah, for the most part you can just sit there spamming attacks while tanking damage if needed. It's only the boss rushes that really even require blocking.

The recent ones are piss easy. I mean, Kirby in general is probably the easiest of Nintendo's long runners. Only one that ever gave me trouble was The Great Cave Offensive in Kirby Super Star. A few bosses can make you work for it, though.

Controls and concept and goals are generally all rather simple/straightforward. The newer games do have lists of all the various moves you have in the pause menu though, if that counts as a tutorial --- THIS IS WHAT I HATE A BOUT EVREY WEBSITE!! Kirby games are pretty easy, but often there is some rewarding stuff for hardcore people.
