And you mainly need to play the rest of the game to level up/grab equipment/etc?

Chrono Trigger is the closest I can think of but there are still times when you're locked out from it. At least on the first playthrough.

I think you can technically get to the final boss in Morrowind as long as you have a means of levitating over the ghost wall, be it a spell or a potion.

I haven't played it, but I heard that you can beat Devil May Cry V right at the beginning if you're really good.

but I guess that doesn't count since you can only do it at the beginning and at the end.

Well, you can fight the final boss earlier than usual at least once you get to the later part of the game. He's just wandering around and if you defeat him early you'll get the bad ending.

I don't think you actually need a New Game+ or anything. Chrono Trigger just has a hub level (of sorts) with (silly as it may sounds) a bucket that can take you to the final boss. I believe you can use this bucket any time you want, you just have to get to the hub level first.

Came in to say Morrowind. It's an interesting example.

You can head to Red Mountain (where the final boss is) at any time, before even starting the main quest. To actually beat him, you need 2 magical artifacts (Sunder and Keening), which you can also obtain right from the off. The caveat is that these artifacts cause (usually mortal) damage when used. Late in the main quest you obtain another artifact (Wraithguard) which guards against this damage. That's how you're meant to do things.

In true Morrowind style, there are ways around this. The first is a "short circuit" in the main quest (which is there in case you kill an important NPC and make it unbeatable otherwise). Vivec (the most powerful NPC in the base game) can be killed for Wraithguard (it then has to be activated for you by another NPC). The second way around it is to have enough health to survive using Sunder and Keening without Wraithguard (i.e. a shit-ton).

Whichever way you do things, you need to be quite powerful (there are easy ways to become so through glitches or exploits).

I may have gotten some details wrong.

Two Worlds. In fact, speedrunning the game involves just bopping the final boss on the head, letting him hit some village NPCs and watching the resulting chaos. It's pretty great.
