Food is so much better than it ever used to be. The standards have been raised so high that now you can step into a shitty chain restaurant and eat something gourmet. I don't mean gourmet as in pretentious either. Just like, cooked with good techniques and with a bit of care.

I was at wetherspoons last night. I don't know if you have an equivalent in the USA, maybe applebees or something but a pub. The kind of place you go because nowhere else is open and you're skint. It always used to be awful, but you'd brag about how you got a full roast dinner for 5.

I had a burger there last night. It was a "tennessee burger" listed under the gourmet burger section. It came in a brioche bun, toasted on the inside. The paddy was thick and cooked perfectly medium. The bacon had been crisped, the onions properly fried. The chips (fries) were fluffy, crispy and not dry, and still hot. There was a side serving of maple bbq bourbon sauce. There was no shitty single piece of wilted lettuce and half slice of tomato on the side as has always been customary in awful british cuisine.

I had the best burger I've had in a long time at a fucking wetherspoons. 10 years ago I would have just been amazed that wetherspoons served burgers.

I don't eat out unless it's actually good. Applebee's is crap and I avoid chains or "fast casual" joints like the plague.

The one thing missing now though are the small diners where you get great food and big portions cooked traditionally. A lot have been shut down i have noticed.

Definitely the opposite side of the spectrum to my argument is all the small diners over complicating basic shit and trying too hard to present it for that cool instagram pic.

I had the worst eggs benedict of my life at a little hipster cafe down in Manchester not long ago. They decided to throw out the traditional recipe that makes it such a classic and instead infused worcestershire sauce into the benedict. To top it off they drizzled balsamic vinegar in an artful spiral around the top of the dish. The bread was some kind of gluten-free cornbread, at least that was the taste and constency of it.

Meanwhile the eggs were cold and undercooked. Who the hell came up with this mixture of flavours, they should not be anywhere near a kitchen.

My dad is a baby boomer and still goes to Micky Dee's pretty religiously on his business trips. I think 90% of why is because of nostalgia.

As far as the shitty sit-down chain restaurants all over America like Applebee's or TGI Friday's, I would blame Gen X just as much for keeping them alive for the last few decades and being too lazy to do anything better.
