Not a surprising elimination - it's a short scene, Hamlet's not in it, and there aren't any hugely famous lines from it. Gertrude doesn't get big revelatory speeches about her motivations, but there's space to define her character through performance here. Whose side is she on? Did she default to Claudius out of fear and panic, or did she weigh her options and come to it through consideration? Did she omit details about what Hamlet told her out of split loyalty and a desire to protect him, or did she not believe him at all and meant it when she said Hamlet's mad? Furthermore, as Hamlet's been trying to find out, were they revelations? How much of what Hamlet said did she already know or possibly even have been involved with? A lot might have just been dropped on her, and how she feels about it has to be conveyed in how she responds to Claudius. At the same time, Claudius is trying to get a handle on what she knows and how she feels, and deal with Hamlet without revealing too much.

I'm watching the excellent 1980 BBC Shakepeare adaptation along side these eliminations, and I don't know if it's worthwhile to talk in detail about a specific version here, but I probably will at some point so I can talk about how much I love Derek Jacobi's Hamlet.
