With A/C circulation mode on so no unpleasant outside odors can get in?

I know it won't use much gas, but is terrible for your engine or AC to be left idle for a few hours? I won't be doing this often.

If it can handle being on a road trip for several hours running the AC at 3000rpms I'm sure idling will be fine

Do you think exhaust/carbon monoxide will get in if I'm parked outside?

I want to take a little nap during a road trip but don't want to rent a hotel and I want to be in air conditioning.

Police vehicles idle for long periods of time, but they're also equipped with heavier duty alternators to deal with the larger power generation requirements.

I would imagine as long as you don't have any kind of exhaust leaks putting fumes into the cabin that you ought to be ok to do this, but I would personally shut the thing off just to not run down the battery or cause electrical shit.

Make sure your exhaust pipe isn't covered up or restricted by anything as well. If it's blocked it won't leave the vehicle and leak into the car, which is very bad.
