The map is filled out. I don't know if I have the stamina to find all of them. Are there any 'highlight' shrines to be aware of? A reward for doing them all?

shrines were definitely the most disappointing thing about botw

would rather have like 10-20 dungeons in the open world

I don't think shrines are a bad concept necessarily but yeah the game probably could be condensed like 30%. Zelda did the feeling of a living open world better than actual open world game devs but did it need to?

The northwest snow mountains and the southeast jungle clearly suffered a lot. Nothing but shrines for those places and they were running out of ideas too so theres like four combat shrines in the northwest

The biggest issue though, is that due to the non-linearity and popcorn design, the devs are very rarely able to "go all the way" with a concept and really test the player. Mario Odyssey suffers similarly. Condensing them into a couple dozen dungeons seems like a better choice.

Hopefully Nintendo doesn't fall for the "game needs to be bigger world every time now" meme like Rocksteady or Rockstar
