I did it again cause it came out so good last time, but I made some changes. I used Russet potatoes instead of golden potatoes and I have to say that was definitely a bad idea to ever use golden potatoes in the first place.

I also added some dried chopped onion.

Did you use biscuits?

yes. biscuits went straight from the oven to the pot. you can check out the bottom of the dish and see a little bit of biscuit sticking out.

this is for a small crockpot, I think you can probably just double the ingredients for a large one.

4 boneless / skinless chicken thighs
1 really big ass russet potato or two smaller ones
2 small cans of cream of chicken
5 small biscuits, preferably ones that you're baking yourself.
about 1.5 cups of mixed frozen corn / peas / carrots.
I couldn't find a bag that was just these together so I ended up buying a bag of peas and carrots and a separate bag of corn.
herbs and spices to taste.
1/4th cup heavy cream

1. start with a slow cooker liner, don't try this without it
2. place the 4 thighs on the bottom spread out as evenly as possible
3. put some herbs and spices on the chicken. I used generic McCormick "Italian Herbs" and "Chopped Onions"
4. Put in the cream of chicken, it's probably going to come out of the cans in globs so spread it around so that it's even.
5. Chop up the potato and put it in the pot, the pot should be mostly full right now.
6. turn the slow cooker on low and leave it for at least 6 hours
7. when that's done, use a fork to split the chicken up (it'll basically just fall apart)
8. add in the frozen veggies (you can thaw ahead of time if you want)
9. add in the heavy cream, and mix it a little
10. start baking your biscuits.
11. when the biscuits are done, put them directly in your slow cooker and press them into the pot.

edit: sorry, as always, don't forget to taste periodically and add salt and pepper.

serve and enjoy.

if you want actual pies, you can skip the whole biscuit shit, just pour the stuff you made in the slow cooker as filling into the pies, cover with pie crust as needed, and bake until the pie is done.

It's really little. Just spread out and contrasts well. It's less than a teaspoon.
