Hmm... I'm having trouble narrowing down a favorite so, All female version of:

The Thing. That could work out really well.
Die Hard. As funny as the idea of the no shoes subplot is in this scenario, I just don't see it turning out good
LotR. will be impossible to do since there is a plot point specifically about gender
Jurassic Park. hmm...possible but hard considering the sexism subplot.
Jaws. It'll be fine.
Aliens. It's doable, but it ruins part of what makes Ripley unique in the setting, as many Syfy originals have shown.
Predator. I....actually want this explored. It would be a unique take on predator culture.
Terminator 2. It'd probably be good.

Jacob's Ladder has strong allegorical allusions to the Bible, and Jacob is basically a stand in for Job while Jezebel, his wife, plays the part of the woman portrayed in the very same work - a licentious woman whose name belies her true motives of being the temptress and seductress, the mischievous devil trying to destroy his past.

Jacob's Ladder is in my top 3 pretty easy, sometimes number 1.

Have you seen the deleted scenes where Jezebel shows her true form? Apparently they removed it from the film because test audiences left feeling too emotionally drained. I think they made the right choice, though, leaving it more open to question.

All-female version of End of Evangelion? I mean sure, most of the Japanese VAs are women anyway.

For the sake of the topic - a remake of Pulp Fiction wouldn't work, period. I'd be down to see an all-female crime movie, to the point where I'm hoping Ocean's Eight is good, but Pulp Fiction feels like such a unique snapshot of the time and I don't think it can be recreated.

It evokes nostalgia for tropes and genres of decades past, with surf rock, post-Korean War flashbacks, an intentional throwback to the culture of the 50's and 60's with Bud's Diner - but the setting is definitely mid-90's. You've got skeevy drug dealers hanging around all night eating cereal and talking into these bulky portable phones, you've got shitty fast food, you've got some dudes talking about McDonald's, you've got toaster pastries. It's nestled between when cordless phones were huge, and when Nokia ruled the mobile phone market with a sturdy phone that fits in your pocket - which is itself an age that has passed.

Pulp Fiction evokes nostalgia for those older factors that harken decades before the movie was made, but it's also a snapshot of what used to be the present in the mid-90's. Its modern twist on those older tropes has itself been left behind and evokes its own kind of nostalgia. Even without changing any genders or story beats, Pulp Fiction is a movie that you can't capture again with a remake.
