I made some red velvet cupcakes recently that were really good (with white chocolate cream cheese frosting). I opted not to add the 3 tablespoons of red food colouring the recipe called for, though, because that was just gross. They ended up being a reddish-brown instead (the acidity of the buttermilk and vinegar reacts with the cocoa to change its colour), so not as red as most would expect.

its just chocolate and vanilla mixed together Not at all. For one thing, that's kind of fundamentally misunderstanding what vanilla is (most chocolate stuff still has vanilla extract in it). For another, the actual defining ingredients for red velvet are cocoa, buttermilk, vinegar, and baking soda (and probably some sort of red, traditionally beet juice). ... Copied to Clipboard!
