I don't read a lot of comics, but I remember Iron Man wasn't exactly super popular before the MCU movies.

Well his premise does seem like the most "movie-able" in terms of the sheer cinematics. Lots of epic fighting, flying, and action. You can never ignore the "cool factor" of having a robotic suit of armor. Plus the whole "guy's been hurt so he fights back"/"didn't realize my people did such awful things, so I'm gonna change it" that resonates with general public.

The rest don't feel quite as marketable on their own without first getting everybody's attention. Cap basically boils down to "weak kid becomes tough guy" with very little build-up. Spiderman was done to death already. Thor is too foreign and unrelatable to be the figurehead. You have to get people invested in the Marvel world first before you can bring their attention to the other characters, and Iron Man was the perfect one to introduce the Marvel world.

It wasn't necessarily going to be him. He was just the first movie and it was a raging success, so he got pushed to the front of the line.

Green Lantern was originally meant to be the launch of the DC Cinematic Universe, but since it flopped they started over. It could have been Ryan Reynolds as the main star in DC if things went differently.
