I find Saints Row II and Watch_Dorks to be more fun than GTAV (only gta I've played). I like GTA V when it's raining in the night in-game and I just drive around, that's super soothing, but besides that I don't get a lot out of it.

Because they spent a ton of effort into differentiating the areas through both major and minor details rather than just having the majority of the map be an empty desert

I thought someone did a comparison and V's is indeed the larger map.

It's probably presentation and perspective. A lot of GTA V is more or less meaningless. Back when open world maps were smaller they had more attention to making it interesting so that you're engaged. SR2 districts is a good example of that. There's also likely that draw distance is lower in San Andreas. Those two effects is why a tiny game like Morrowind feels as big as Skyrim.

When I first played 5 I thought San andreas had a bigger map, but after playing thru 5 several times and then going back to San Andreas it's obvious the cities are much smaller and the map overall isn't that big. Hell, just fly around the map in SA. it doesn't take long to go from airport to airport.

It's not. I just replayed San Andreas so I can say this with certainty.
I wouldn't say that San Andreas is *much* smaller, but it is. The thing is though, San Andreas gets a lot more use out of the map than GTA V does. San Andreas packs a lost more into a tiny space, where as GTA V is filled with huge open spaces that have almost no use. Also, another problem is that GTA V's recent vehicle (flying rocket motorcycle and flying deluxo) editions have made travel across the wide open spaces super easy and faster which makes the GTA V map feel smaller now. --- ...
