The broth:
I sauteed shallot, garlic, ginger, cilantro stems, dried havanna chili pepper, parsley stems, lemongrass, the bone of the meat and some straggler meat bits and fat in olive oil in a pot. Then I added water, let that reduce to half, then spice it up with bit of oyster sauce and fish sauce to taste. I also added the prunes that were cooked with the meat yesterday to add sweetness to the broth. Added more water let it reduce again, taste until it has rich full bodied flavor, (less salty than you want it). The rest: Then I strained the broth over the instant noodles with the flavor packet (beef), added the cubed meat and sliced red bell pepper and some more water. Let that cook until the noodles are al dente. Then add bit of lime juice over (fresh) to balance the acidity to enhance all the flavors. Then put it in a bowl and top it with some cilantro, julienned ginger and some chopped lemongrass. Tasty as FUCK! --- ... Copied to Clipboard!
