Not sure about Bloodborne, but...God Eater 1 and 2 seem to be right up your alley.

If it's your first souls game people say it's easy, as someone that started on souls I find the combat way too fast and clumsy.

I haven't played BB, though I've watch full playthroughs of it- generally I think DS is harder overall but BB has some very difficult bosses (OoK, Ludwig)

I never used shields and/or heavy armor in my souls games, so BB was a pretty much exact copy of my combat methods (minus any real ranged attacks).

The souls games vary in difficulty though, with 3...arguably, being the easiest one. So it really depends on which game your comparing it to.

DKS3 is easier then BB I'd say.

I think 2 and 1 are....about the same?

None of them are insanely hard even if you don't play defensively.

DS2 was "harder" in the same sense that it's harder to brush your teeth with a toothpick than it is with a toothbrush. The game mechanics are all-around terrible in DS2.

Not having an active block is a tough adjustment to make if you're used to defensive-play in souls games. That can make it FEEL more difficult.

However, the dodge mechanic in Bloodborne is so much more fluid and easy to pull off, it almost makes up for it.
