American Chinese food is more science experiment than food. There's this very common light brownish that's common in a lot of their cuisine. It ends up giving a lot of Japanese food this annoying watered down soy sauce flavor. They use very little oil in general outside of sesame oil on sushi for the actual good sushi restaurants. Chinese food: They're literally on the opposite spectrum where they just fucking use oil for everything. You'll have a shitload of food literally floating in oil. But they actually cook either leek or pepper to create their oil which gives their food this subtle nutty flavor. They somehow make American food look less oily in comparison. I think overall though Chinese>Japanese. Lol at people who think anything American food is in any way better than any Asian cuisine though.
