Why didn't Obi-Wan recognize R2-D2 or C-3PO in A New Hope?

Luke: Well if you're Obi-Wan, then the droid does belong to you

Obi-Wan: I don't recall ever owning a droid......unless of course this is the same R2 unit that fought alongside me during the Clone Wars. That R2 once destroyed an entire squad of super battle droids by spraying oil on the floor and igniting it using jet boosters. It was one of the most handy droids I have ever encountered...and he was a good friend.

Luke: You fought in the clone wars?

Obi-Wan: Yes. I was once a jedi knight, same as your father.

Luke: I wish i'd known him.

Obi-Wan: He was the best star-pilot in the galaxy, though he was a mere child when we first met. He had just finished assembling C-3PO, the very droid sitting across from us right at this moment. He had built it to help his mother, your grandmother.

Luke: Tell me about my grandfather.

Obi-Wan: That is not a story I would tell you.

Luke is meditating some time before RoTJ

Luke: Ben...I need your guidance. The bounty hunter Boba Fett has taken Han Solo.

Force Ghost Ben: Ah, I seem to remember meeting a Boba Fett when I was a Jedi Knight. His "father", who Boba is actually genetically identical to, was hired to kill your mother, but rather than doing it himself, he employed another bounty hunter to do the killing, who in turn decided to use these poisonous slugs to do it. Boba's father Jango Fett was used as the template for all clones during the clone wars. If memory serves me right, Jango met his demise when his jetpack malfunctioned. As Boba seems identical to Jango in seemingly every way, perhaps he shares his father's weakness.

Luke in the medical bay: Yoda... Dagobah...

Chewbacca: Oh, could he be referring to the Jedi master Yoda? I once served along side him during the clone wars, when my planet Kashyyk was being invaded by droids. He was a little green guy and didnt look like mucu of a fighter but he was a decent commander. Shame the Jedi never did anything to stop that Palpatine guy though. What was his apprentice's name again? S...Sky...ha I'm sure it'll come to me eventually.

The medal ceremony after the destruction of the first Death Star has just come to an end. Luke is hanging out at a Rebel after-party, and he spots Leia.

Luke: Hey Leia. Now that we have some time to breathe, I wanted to ask you something. Just how did you get roped into this whole mess anyway?

Leia: Well...it's kind of a long story.

Luke: I'm all ears.

Leia: Well, my father, rest his soul, was one of the founding members of the Rebellion. Actually, R2-D2 and C-3PO were there too, which is why they were on our ship, the blockade runner. Before that, though, we were all here on Yavin 4. You see, earlier Mon Mothma had hired this girl Jyn Erso to go find this guy Saw Gerrera, but lots of stuff happened and when she came back she told the council about the Death Star. Oh, it turned out her Dad had worked on the Death Star himself and it was he that designed the flaw.

Luke: You mean the exhaust port that I had to use the force just to shoot some proton torpedoes into?

Leia: That one.

Luke: Not much of a flaw, is it? I mean once I made the shot Han was all like "Great shot kid, that was one in a million." Did he expect the Alliance to have a pilot strong in the force in their ranks?

Leia: Well, Galen Erso was a guy who liked taking chances. His password to the Death Star plans was "Stardust", so I guess he was banking on his daughter being the one to personally be on the planet which was storing the plans, and also to be the one to personally be the ones taking the plans.

Luke: Huh.

Leia: Well, anyway, at first the Rebellion didn't want to go to this planet Scarif to grab the Death Star plans, but when news arrived of the battle, this Admiral sent the fleet over without really getting permission from anyone else. I guess it was pretty reckless of him. I swear someone playing hero like that is gonna get us all killed some day, ha. So anyway we ended up getting the plans, right? But not before pretty much everyone on the mission died, including this one guy who was kind of like a Jedi but not exactly. We never really asked him what his deal was.

Luke: That would have been nice to know.

Leia: Yeah. So they transmit the plans, but I guess the transmission was messed up or something because only one of our ships received it. So they copied the plans to a little memory drive, handed it off to the frigate I was aboard, and then we jumped to Tatooine. I'm not sure how they followed us to Tatooine, honestly. Pretty sure they can't track us through hyperspace, or at least not yet. Anyway, Vader took me prisoner, and he didn't buy my story that we were on a diplomatic mission to Alderaan because like a couple hours earlier he literally saw my ship leaving the battle.

Yep, Obi and Yoda kept the truth from Luke because they were afraid his rage and sorrow over learning it would expose him to the dark side. They're also afraid that Vader has a legitimate reason for rejecting the Jedi and they don't want to risk him persuading Luke. Their plan was to mold him into a Jedi more like those of the prequels, and wanted Luke, after his training was complete, to destroy Vader while being totally dispassionate and ignoring his emotions. Luke defied them, saved his father and the galaxy, and mastered his emotions. That's pretty much the point of the OT, but lots of people are really fucking stupid.

C-3PO had his mind wiped in ROTS and we have no idea what R2 is saying or what his mindset is. The reasons for him keeping certain things to himself are limitless.

Leia is force sensitive and the daughter of the chosen one. If Ani can see his mother on the other side of the galaxy through the force, Leia as a baby can have visions of her mother through the force.

This is a trap a lot of writers fall into. Everything must be connected. Characters end up knowing each other and had a past experience(s) together (which will come from out of nowhere and not make sense) or might be related to each other or someone will make a story that is connected to the plot of another story. It's a cheap way to make their own stories feel more important due to the connection to a better one.

Lucas did it and various EU writers did it too. It ends up making the whole world of Star Wars a lot smaller... and lamer. Rogue One is kind of in that boat as well. Instead of a whole new story, they just told one that's connected to the OT and really didn't need to be told.

Han: "I've been from one side of the galaxy to the other, I've seen slot of strange stuff, but over never seen stuff, but I've never seen anything to make me think there's some all powerful force controlling everything."

Cheebacca: "Actually Han, I fought along side Jedi during the Clone Wars, it's totally real. There was this little guy Yoda, he had good relations with us, well, these two clones were about to kill him and he totally sensed it coming. Cut their heads right off, it was awesome!"
