Cut the biscuit in half, there's no reason to do anything else.

I tear the biscuits into bite sized pieces and coat them in the amount of gravy I like.

This is the one true answer

If your fingertips aren't burning by the time you finish tearing them up, the biscuits aren't hot enough

Tear them into pieces and then pour the gravy over the pieces.

Break the biscuits into tiny pieces. Dip your full hand into the gravy and then coat it in the biscuit crumbs.

Then lick it all off your handn and repeat
