I rarely eat any sauce, but I got friends that eat bearnaise on their pizza.

Cook the butter, herbs, wine, and shallots in the butter until hot and fragrant. Slowly pour the mixture into the beaten egg yolks while whisking. Done.

As long as you don't pour the butter into the yolks too quickly, the yolks won't coagulate.

I've even seen some people make the whole thing in a microwave.

From what I've seen you do the vinegar reduction first with the whatever aromatics, herbs, mix it with the egg, then pour in the melted butter.

Ok I made it. I'll make a separate topic later.

It didn't break or anything and turned out delish. However I feel the sauce got a bit too thick somehow, I may have rushed the whisking of the egg.

It also doesn't have as rich flavor of tarragon as I wanted, I prob didn't reduce the vinegar enough, and next time I will use tarragon vinegar I make myself.
