Cook the butter, herbs, wine, and shallots in the butter until hot and fragrant. Slowly pour the mixture into the beaten egg yolks while whisking. Done.

As long as you don't pour the butter into the yolks too quickly, the yolks won't coagulate.

I've even seen some people make the whole thing in a microwave.
